Oatmeal Breakfast Cupcakes
 
So... I have this type of breakfast when the weather begins to get warmer. It's pretty easy to make and it's pretty tasty, for an easy on-the-run breakfast.

Directions: Make a small pan of your favorite type of Oatmeal. I use organic rolled oats, cooked in bottled spring water, with a dash of sea salt, chopped walnuts, chia seeds. Once it is finished cooking, let it settle in the pan while it cools. While it's cooling, do two things: 1) add your sweetener (I use Truvia) and a generous sprinkles of Cinnamon. Then, 2) line a cupcake pan with cupcake paper liners, then drop scoops of your oatmeal into each paper cupcake liner. Set your pan of oatmeal filled "cupcakes" in the fridge to chill over night and be ready for your breakfast the next morning.


I had a couple of Oatmeal "cupcakes," for my breakfast this morning.

You can always pair up your oatmeal cupcakes with fresh fruit, too. I had a few blueberries in a carton in the fridge that I added once, to my oatmeal cupcake batch. Pretty yummy combination, it turned out to be. :balloon:

Today, I made my own homemade hot cereal from scratch. I steamed a few big cauliflower buds and some wedges of organic green cabbage. Then I pulsed it in my Ninja food processor; added some coconut cream, a few packettes of Truvia sweetener, a big dose of cinnamon and wha-laaaa, I had a nice bowl of hot veggie 'cereal'. I even put some flaked unsweetened coconut flakes and chia seeds on top, sprinkled lightly.

It was simply delish. :hk28:

Cornmeal-Chia seed crepes, sliced fruit, mascarpone cheese, a cup of hot herbal tea, and two 6-minute eggs.

Miniature oatmeal cupcakes and half of a small cantaloupe, sliced into chunks.

Coffee: Blonde Sunrise Roast by Starbucks, with coconut milk and two Truvia packettes. One 8 ounce cup is enough.

There are two ways I know of to make sure you're getting a nice, ripe pineapple. One, smell the bottom. If it smells sweet, it's ripe. If you can't really smell anything, it's not ready yet. Also, lift it up by one blade and if the blade comes out, it's ripe.

Personally, I tend to enjoy the ones that are more yellow than brown. I love fresh pineapple!

This morning, I had my usual work oatmeal. Chock full of goodies but with an instant base. Oj to drink.
