These are the best blueberry muffins I've made in a long time, probably because these are some of the best blueberries I've ever tasted.

A slice of cold leftover pizza and a room temperature Mtn Dew. (I would definitely have preferred Stone's croissant.)

Broccoli Cheese Cornbread

- 2 boxes Jiffy Mix cornbread mix (9 oz each)
- 3 eggs
- 2/3 cup milk
- 8 oz cream cheese softened
- 1 stick butter
- 1/2 cup chopped onion
- 10 oz box or 12 oz bag frozen chopped broccoli

Cook broccoli in microwave and drain. Cook onion in melted butter until transparent. Mix all ingredients. Spray a 9 x 13 pan and pour in mixture. Bake at 400*F 20-25 minutes until golden brown and knife inserted in center comes out clean.

I made the cake in a cast iron skillet, so the pineapple slices were beautifully caramelized . . . I had two pieces.
