When I was avoiding sugar, I used to take baker's chocolate, place it in a saucer, put splenda and cinnamon over it and then microwave it for 45 seconds. It would make a lovely somewhat bitter chocolate paste. It was very satisfying. In fact, I wish I had some now. :)

I haven't played much with stevia and chocolate yet, but I will experiment at some point.

But I DO share :chocolate: rav gets all the chocolate I buy, albeit after a weeks flight, because I'm allergic to it!

A chocolate mousse that will take you back to the French childhood you never had...

Melt a bar of 70% bittersweet chocolate in a bain marie (or double boiler)
Let it cool a little while you…

Separate 6 eggs.

Mix together:
2 yolks
Orange zest
Splash of orange liqueur
Pour cooled chocolate (so it doesn’t cook the eggs) slowly into egg yolks (whisking quickly)

Whisk 4 whites into soft peaks, sprinkle in a Tbsp. Of sugar. Continue whisking.
(Set some meringue aside for topping mousse)
Fold in chocolate mixture.

Cover in plastic (so it doesn’t soak up other flavours) while it firms up in fridge

Top with meringue & garnish with orange zest & chocolate curls

Chocolate Pecan Chewies
5 dozen cookies

1 (14-oz.) can sweetened condensed milk
2 cups (12 oz.) semisweet chocolate chips
1/4 cup butter
1 cup flour
1/2 cup chopped pecans
1 tsp. vanilla extract
60 pecan halves (optional)

Combine condensed milk, chocolate chips and butter in a heavy saucepan.

Cook over medium-low heat, stirring constantly, until chocolate and butter melt. Remove from heat.

Stir in flour, chopped pecans, and vanilla. Drop by teaspoonfuls onto ungreased cookie sheets. Press a pecan half into the center of each cookie (optional.)

Bake at 350 degrees F. for 7 minutes. (Do not over bake.)

Transfer cookies to wire racks to cool.

Bake ahead and freeze...will keep up to 3 months!

I've been watching the food network again...
 
Petits pots de crème au chocolat

Melt chocolate in bain marie (not too much, because chocolate will set & become hard)

Heat ½ cream ½ milk
Vanilla extract

Separate 4 eggs & stir (not whisk) egg yolks (save whites for a low cholesterol omelet)
Stir in melted chocolate
Pour in milk/cream mixture.

Strain into a large mixing cup & skim off any bubbles.
Pour into ramekins (petits pots)

Gently bake in a water bath until they’re set on the sides & still giggly in the centre.
Let them sit in the fridge & serve.

Dark Chocolate Fruit & Nut Bar

Melt 70% chocolate in a bain marie

Chop:
Candied fruit (raisins, dried cranberries or cherries, ginger)
Nuts (macadamia, hazelnuts, almonds)

Spread out onto parchment paper lined baking pan

Pour melted chocolate over nuts & fruit
Let firm in fridge

Sweeten with honey & heat
Add a little warm milk to Cocoa powder to make a paste
Add to warm milk.

Mix & bake in one pan!
 
E-Z Chocolate Cake

Sift into 8"x8" glass baking dish:

1 1/2 c flour
1 c sugar
3 Tbsp. cocoa
1 tsp. baking soda
1/2 tsp salt

Mix all ingredients together & then make 3 'wells'...

Pour one of the following into each well...

3 Tbsp. vegetable oil
1 Tbsp. white vinegar
1 tsp. vanilla

Pour 1 c cold water over & mix.

Bake at 350 for 30 minutes.
