We went to Wendy's and I had nuggets, fries and we spent too much time trying to figure out how to work their damn drink machine.

Yesterday was chicken korma with basmati rice and dahl. Had leftovers for dinner.

We're sharing a tuna salad sandwich, cantaloupe melon, celery sticks and peppered cottage cheese and pretzels.

BBQ chicken sandwich...the Chicken Farmers of Canada sponsor Canada Day... laugh all you like but it's a damned good sandwich!

Today's lunch was Baked haddock with garlic powder, onion powder, salt, pepper, cayenne pepper, butter, and fresh lemon juice squeezed on just before serving. I also made green beans fried in a little bacon grease and cheesy scalloped potatoes. I also served it with stuffed green olives, homemade applesauce, and zesty Vlasic dill pickle spears.

Unexpectedly out for lunch and very much enjoyed Tandoori roasted cod with crab spring roll, fennel and cucumber salad and almond rice pilaf.....in an old country pub, sitting by the window and gazing out at the beautiful gardens and steady summer rain...seems our two day heatwave is over !

I had Sante Fe style chicken soup with Sweet & Spicy Chipotle Wheat Thin crackers and sharp white cheddar cheese.

BBQ, namely a big sliced brisket sandwich with lots of sauce and pickles, for dessert was a slice of red velvet cake.

I made an omelette today with eggs, andouille sausage, peppers, onions, and swiss cheese. A little mustard to dip each bite and *kisses into fingers and throws it outward

I'm eating a nice salad from El Pollo Loco—they have really good salads. This one is less than 400 calories.

Today I wanted to create in the kitchen. I started with some olive oil, freshly ground turkey, diced onions, fresh thyme leaves out of my herb garden, salt, onion powder, garlic powder, and pepper. I left it simmer and added diced tomatoes, some snapped string beans, a cup of red wine, and a dash or two of worcestershire sauce. Cooked it for a few more minutes then scooped it out into a sprayed glass baking dish. I added chicken stock to the broth in the pan and sprinkled flour to make a gravy. Once that thickened I poured it over the meat and veggies in the dish and peeled potatoes, boiled, drained, and mashed them and put on the top. I put it into the oven at 400 degrees and baked 20 minutes then raised the oven to broil and browned the top.
Oh Em Gee. It was fabulous!! It has been ages since I made shepherd's pie and I have never made it with wine before. Daayyuumm!! Amazing! |
Dhal and naan bread. A coworker made it and it's really good. She even brought in some chopped tomatoes and cilantro for us.
