I'm not normally a cranky person but I'm feeling cranky. There are a few people at work not doing what they need to do and it's trickling down to what I need to be doing and it's making me get behind.
And a lot of the residents are super cranky and lashing out at me about whatever is going on for them. And it's really hot in here. No air conditioning but I have a fan but also my phone sucks and a lot of people calling in have bad phones or talk really quietly so I have to keep turning off my fan to eliminate the noise to get a better shot at hearing what they are saying on the phone. I'm very glad we have Thursday off. |

I found a recipe for vegan cornbread. :) I will simply leave out the sugar.
I hate sweet cornbread! Why not just crumble yellow cake over a plate of greens? |

I love a red bean stew poured over not-sweet cornbread....
My daughter used to love Johnny Cakes for breakfast with a little honey on them. I should remind her of that. |
I love cornbread of both types, unsweet and sweet, but definitely only unsweet with greens or peas/beans.

Now they also make a vegetarian corn muffin mix. The only difference is the regular mix has lard in it and the vegetarian version uses vegetable shortening. When I was a girl I'd make a box of jiffy cornbread mix up and think I was quite the cook. Sometimes I'd double the recipe, use two boxes, and then I fancied myself quite the chef.

The awesome time I had while relaxing down at the coast.... feeling pretty majorly stuffed since Brunch, tho. But I guess it's time to go raid the freezer and find some non-diary ice-cream to savor before bedtime (Toasted Coconut or Key Lime).

Tasted good, but scary looking so we got to keep many for ourselves...yum! |

All of our things have been moved and are in a safe place. I am hoping we find a place of our own soon. My family has been very gracious during this transition but finding a new home is moving up on my list of priorities.
Also, summer is almost over and kindergarten is almost here. Where did the time go?! |
A copperhead I killed in backyard about 15 minutes ago ... I was about to let pups out for last pee break but first I always walk the backyard with flood lights on and head lamp ... there he was slithering along in front of the shed and that is the very place they all go to pee ... tapped him on the head with a board. I tire of hiding bodies. The pups knew nothing about him when they all went and peed in front of the shed.
Bye bye Mr. No Shoulders! I hate, absolutely hate these snakes that crawl all over these woods. I put him on a wooden pallet, took a photo of him and posted it in my gallery. |

Today the job I'm trying for is on my mind. I had the interview last Friday and the presentation. It went really well. They said I should know by tomorrow. So of course they are waiting until the last minute. Hope I hear something soon!

Well, I did not get that job. However, I am positive that this just wasn't the right direction for me. I'm meant for something else. :)
This week has been horrible. Harlow has been so so sick. She's finally feeling better and it is so nice to not have to stress as much today. Here's to a nice quiet weekend. |
On my mind
The way humans react to me in public. There is usually a look by one person followed by whispering between that person and the other people in the group then everyone turns around to look at me with disgust followed by more whispering. So not fun!

Cooking Mexican food is weighing heavily on my mind.
I found a new (to me) website called Mexican Please. I think it's the best site I have found on the basics of Mexican cooking to date. I expected it to be produced by a sparkly eyed Latina, but it's by a gent who lived in Mexico for awhile and bothered to learn to cook their cuisine. I think he teaches the basics really well.
I will admit that I'm a Mexican food snob. I grew up on it living in Cali. Did my Mom cook it? Yeah no, except for tacos. It was my friends and the restaurants. I lived in Texas for quite some time and thought the Mexican food there would be fabulous. EEEEKKKKKKK, no offense to the locals but that Tex Mex is not for me. I'm really spoiled by California Mexican food. This site is wonderfully authentic and I can't wait to try some of the recipes. The education starts with salsa. Coconut Thai Curry hummus sounds like a good idea. However, it is not. It might be better if whoever developed it hadn't had such a heavy hand with the spices, because it is so red-pepper spicy I almost can't eat it. I certainly can't taste the garbanzo beans at all.

No more one or two bedroom apartments, and only two three bedroom units still left at the new development. The place is filling up fast and by the end of this week, if not already, I'm sure there will only be four bedroom apartments still available. I'm glad I got in but nervous about making the move. There is a farmer's market a couple of miles away. Other than that all services are five miles or further by car, and that's one way. However the weekday commute will be easier for J and It's on my son's way home from work. He'll stop by at least once every week. So I won't be completely stuck on my own out in the sticks. I guess any change, if even for the better isn't without hassle, has its pros and cons. Good thing I'm trying to eat healthier. I'm sure odds of getting a cheap pizza delivered out that way will be next to none.

On my mind
I was thinking how I would like a home made pizza, like my ex use to make. She would buy a pie crust, roll the edges, line up the toppings and pop it in the oven, better than store bought for sure. Add all the goodies you like at a lot less price.
