I snack at night at work but i had cream cheese and chive crackers, a ding ding and drank a bunch of water.

Out to lunch with friends and colleagues. I am ordering the fish and chips with ice tea to drink.

So, i went grocery shopping today... and well what's that saying? "Don't shop on an empty stomach"? I had someone's voice in my head telling me to eat healthier.... so ....salad it is.
But I got cranberries and sliced almonds with a raspberry dressing.. Don't worry for those who are thinking I went off my rocker, I also topped it with some gummy bears and washed it down with a nice cold coke. |
Going out for frozen yogurt with the girls in the orange mobile. Should be fun.

I tried out a new recipe (see below) for lunch today. But I forgot to get a lemon when I was at the store so it was a bit sweeter than I expected. I only had a little (it was delicious but it seemed more like dessert) - and then had some cheese to balance it out.

a small fresh baby spinach salad, with sliced lemon-pepper cucumbers, sliced tomato, and chiK-n tenders (warmed up), with a huge splash of aioli on top, which I sprinkled sesame and chia seeds on that, as well.
Water, to drink. <<<<<~~ wants a scoop of coconut-pineapple sherbet (non-dairy, of course). |
Today I brought a small caprese salad, substituting avacado for the basil, creamy balsamic dressing.

I made Quinoa Enchilada Casserole for the first time. It didn't look as pretty as the picture but it was pretty tasty. I will definitely make it again because it was super easy to make. Recipe here. |

Homemade burger with fried onions, fresh tomatoes and lettuce, pickles, mayo, little mustard, cheese. Iced tea to drink.

I used the leftovers from the week to throw together a burrito and used some homemade pineapple salsa and sour cream on top.

Toasted light rye bread with sliced avocado, and tomatoes, sprinkled with some hemp hearts and pink Himalayan sea salt and fresh basil.

Yesterday I made veggie chili. I'm taking it for lunches this week. It has carrots, bell peppers, zucchini and squash along with beans and of course chili seasoning. I hope it will be as good as last time I made it!

I found this stuff called Cookie Butter. It's a jar of hazelnut spread and peanut butter swirled around like they do in the jars of pb & jelly. I had a sandwich with that and it was freakin' delicious!!! Water to drink.

I made a new recipe: Vegetable Barley Soup.
It turned out really good! I've never had barley before and it was super yummy. I think this is my new favorite vegetable soup. :) |
I ate at the street fair: 2 grilled ears of corn with salt and a small half sour pickle.

Hashed browns, onion rings and a little cheese. I ate healthy at dinner time, honestly! 8-}

Slices of Spam, covered in Campbell's Mushroom soup, topped with Velveeta, 3 dollops of ketchup, crumbled crackers ( remove plastic ), 2 tablespoons of coconut cream sauce, cover entire pan with halves of hamburger buns, sprinkle with the insides of 2 capsules of Ativan. Bake for 30 seconds at 300 degrees. Let sit on counter for 5-6 hours. Toss.
