One of the good cooks brought in a salad made of watermelon radishes, fennel, olive oil and lemon. She offered me some and I added a touch of salt. It was delicious.

Spring salad with tuna, lemon/olive oil dressing, pepper, and a tiny bit of salt while I sit at my desk and listen to an all company meeting. Very tasty.
Most employees are having lunch with the bosses after this meeting, but I'm just not in the mood. Would rather continue working while I eat at my desk. My manager won't like this (she loooooves for her team to show up for these meetings/luncheons), but it's the best I can do today. |

I had a nice garden salad with the best tasting cucumbers sliced up on top,
served with a creamy balsamic dressing and a sprinkling of sunflower seeds. I also had a few freshly baked macaroons. OMG, sooooo goood. |

I must have worked up a giant appetite this week because I am eating a lot of things today. I've got the homemade vegetable barley soup going on the stove for supper tonight... but in the meantime, for Lunch, I have been eating Ritz crackers and putting tons of vegan 'cream cheese' on them. I added roasted minced garlic and scallions to my vegan 'cream cheese' stuff and it's so good that I keep eating more and more of it. :canadian: |

With mushrooms, onion, sausage and a couple potatos. Trying to cut down some starch stuff. Couple of bloody marys to drink. Water too. |
I had turkey and cheese on one of those thin rounds. I'm going to miss bread when I run out. I have only one loaf in the freezer for after this. Small freezer.
Cherry tomatoes Olives stuffed with jalapenos Diet iced tea I will miss fresh produce too, but I will be fine. I have frozen and canned fruits and vegetables. I imagine I can survive a month before going to the store. I do fear that when I really need to go, it will be the height of the outbreak. I always have such good luck. We will see. I could do one of those grocery delivery orders like I did after my surgery and then wipe down the packages. Lord. It's a lot. If I get sick, then I don't have to worry about avoiding infection, just avoiding infecting others, which is a little easier. Not that I want to get sick. I have friends in Northern California who have probably already had it. They were sick, but testing wasn't available. They are holed up anyway. There is a shelter in place order, but at least they don't have to worry about catching it. |
I ate pierogies. They were not gluten free and I am paying for that a little but it was worth it.

Caramelized Jalapeno slices and sliced Portabello, enveloped in Mascarpone Italian cream cheese; with three tiny sliced pieces of Artisan Rustic Rye Seeded bread. Hot herbal Tazo Passion tea and water, to drink.

I didn't have breakfast today and it's a bit early, but I think I will make brunch in a little bit.
I'll make a small omelette, to include a few salad type veggies; then have a few sections of grapefruit. Hot herbal tea and water to drink. |

Sections of freshly sectioned Ruby Red Grapefruit. A few seeded crackers, with a Basil/Rosemary type of pesto and garnished with tiny pieces of freshly cut Sierra region organic Fig's. A cup of hot herbal tea and a quarter of water to drink, on the side.

A really good soup. I made the stock yesterday after roasting a chicken and then loaded the stock up with a ton of veggies and a bit of chicken.

Multigrain bread toasted then topped with avocado and thin slices of cucumber and tomatoes which were sprinkled with a mix of dried herbs, sea salt and a little bit of apple cider vinegar.

A couple of mochi balls (not the ice cream kind) and matcha tea milk drink. The balls I had* (he hee hee) were matcha tea filled with red bean paste.

I had packed a lunch of quinoa, diced chicken, cucumbers, celery, dill and cilantro (from my garden).
However, that will now be dinner because I got spoiled with my Daddy bringing me an "unwich"- lettuce wrap instead of bread- turkey/provolone/avocado/cucumber . Super yum! |

I made a summer pasta salad to take on my picnic. I used high-protein rotinni pasta noodles, cut up a small zucchini, a small sweet red bell pepper, added sweet pickle relish, chia seeds and a small bag of Asian green salad mix, then stirred in the poppy-seed dressing and a few dollops of vegan mayo. It's pretty tasty. Cubed cantaloupe, as a side dish.

Home made sub. Ham, lettuce, tomato, cheese, ranch dressing on a crusty roll. Ice tea with lots of lemon.
