My own version of Ambrosia that's completely within my prescribed low GI, low carb food plan:
Fage 2% Plain Greek Yogurt - small container
1/2 peach chopped
1/2 cup blueberries
2 TBSP unsweetened coconut
1 tsp sugar free vanilla syrup
1/4 cup roasted pecans
1 TBSP heavy cream - optional
Mix everything but the pecans together and refrigerate overnight. Add the cream if it seems too thick. Stir in the pecans right before eating.
Heaven in a bowl!
