I made for lunch what I planned to have for dinner last night...and I had those leftovers for dinner tonight.....
Chicken fajitas...sort of...
Cubed chicken sauteed in olive oil with mixed pepper strips...I added some black beans...sprinkled it with taco seasoning...some Mexican cheese over it and threw it all on a tortilla ...
Mexican rice on the side
Pumpkin ice cream for dessert
