My aunt had a coy pond with water plants, what she did was put post in the ground all around the pond, make a top with chicken wire then cover it the wire and put something on the edges to hold it down but could be raised up on the edges as needed. But on the really cold days she had a low grade heat lamp with a fan too blow the warmth over the pond. I'm sure some kind of set up like that can work out, when I was time too take it off she just took it down rolled it up for the next winter.
