Earlier this morning I cooked a pot of great northern beans. When they were nearly cooked I added chopped orange and green bell pepper, a couple of chopped up zucchinis, garlic, lemon juice,
my favorite Greek seasoning blend, and a cup of shredded roasted chicken. When everything was done I tossed in a couple of handfuls of spinach leaves and allowed them to wilt. I almost forgot...when the beans were cooking I added 1/2 cup of uncooked quinoa to the pot. It turned out more like a chicken & bean stew rather than a soup, and it's really good. That's all!
