I'm having a lite supper because it's an incredibly hot day and because I don't like to eat too much on hot days or when I'm swimming.
It's my homemade pasta salad, made of: high protein shells, quinoa (cooked and chilled, then fluffed for the salad), albacore tuna, fresh organic blueberries, miniature cloves of roasted garlic, then chopped hard-boiled free range eggs (3-5), then mixed with an vegan based parmesian Caesar dressing, which is homemade too.
It's very yummy. The flavors compliment one another, plus it's very satisfying.
