I wound up not having this last night. No worries to those who messages me about it! I'll have it tonight. I just came home too late. Just as well. I see that I forgot the mushrooms. You can't have my turkey meatloaf without diced mushrooms. It adds body and 'meat' to the loaf. Sometimes I'll also add an egg if it's not holding well on its own but not usually.

So, last night I made a stop at Dave's Market, which is not entirely unlike Whole Foods in a lot of ways. Dave's has a tremendous prepared foods sections plus a fresh pizza section and multiple food bars that you can load up for X amount per pound (it's some ridiculous number...also similar to Whole Foods ) but every so often I'll go in and pick a smorgasbord of things from that section and mix and match my meals until they run out.

Last night, I picked up acorn squash wedges, sweet potato wedges, Asian peppers and steak, two kinds of salmon, a beautiful orzo dish, asparagus almondine, Mediterranean bean salad and a butternut slaw.

I wound up having half of one of the salmon filets (with a sweet chili and macadamia nut sauce), a little bit of the slaw and asparagus, a little more of the acorn wedges and a bunch of the sweet potato wedges. Delicious!
