Since I'm working 2-8 tonight I decided to make a dinnery lunch.
I took the remaining frozen shrimp and sauteed them in cilantro infused olive oil. I added some of those trader Joe's country potatoes that I love. They are herby and garlicky and just plain yum. I added some frozen peas since I wanted extra veggies.
I've got enough left for lunch tomorrow. Its so good I can hardly wait lol
