With Rico fresh off of a chemo treatment and not feeling so well, I thought I would make some comfort food type dishes, for dinner tonight.
-- Roasted vegetables (zucchini squash, sliced red bell pepper, asparagus and shitake mushrooms).
-- Creamy mashed Idaho potatoes, loaded with butter and freshly minced garlic.
-- And I am roasting a free-range chicken and brushing it down with cooking sherry.
I picked up a freshly baked and braided loaf of Brioche.
Hot herbal Hibiscus dessert tea, and plenty of spring water, to drink.
