I slept in today, before I return to work this weekend, so I’m going to make a hearty brunch for myself, since my honey is already at work.
I’m going to pan toast two small circles of Naan, in evoo.
In a different skillet, I’m going to reheat a small portion of my favorite veggie hash (shredded cabbage, blueberries and shredded sweet potato) then scoop it out of the pan and drop a two-egg scrambled mix and create a omelet with the veggie hash inside of the egg mixture.
I will slice up half of an avocado to have on top of the Naan circles.
I’m on my first cup of coffee right now, but will have another cup with my Brunch. And,,,, a bunch of water.
