Cayenne Shortbread
Preheat oven to 350.
1 tsp. cayenne
1 tsp. salt
2 1/2 c. flour
1/2 lb sharp cheddar, grated
1/2 lb unsalted butter, room temp
1 c. chopped pecans
Sift cayenne, salt & flour; set aside.
Cream together cheese & butter until well blended.
Gradually add dry ingredients. Stir in pecans.
Divide dough in half & shape into 2 logs,
approximately1 1/2 in. in diameter & 9 inches long.
Wrap in plastic & chill for at leastan hour (can be frozen).
Generously butter baking sheets or use parchment paper. Cut into
1/4 inch slices.
Bake about 15-20 minutes. Cool on wire racks. Store in
an airtight container.
Makes 6 dozen.
These are DELISH! But You might want to warn Your guests
that these are SAVORY and not sweet.....or it's rather
disconcerting!
