Was feeling like chinese food for dinner, and also too tired to go grocery shopping...so did a homemade version of pork fried rice that was very tasty (even the boys liked it) and much healthier.
I cooked 1 cup of basmati rice in 2 cups of fat free, low sodium beef broth (for more flavor). While it was cooking I heated up the wok with a tiny bit of extra virgin olive oil and added....
- 1 large sweet yellow onion, chopped
- 3 stalks of celery, chopped
- 1 large sweet red pepper, chopped
I stir-fried the veggies until they were about half tender, then diced up all of the leftover pork roast and added it, along with about a cup of frozen peas.
Once the pork was hot and the peas were done, I added low-sodium soy sauce to taste...then stirred in about 2 cups of the cooked rice (leaving about a cup for something else).
Another minute in the wok and it was done....tasty, low fat, healthy oil, low sodium (by comparison to usual chinese food) and a much higher veggie and lean meat to rice ratio.
It served 3...but Rooster had seconds.
