Today I made organic boneless chicken thighs I got on sale with a coupon. I placed them in glass baking dish, pour EVOO on them, then smothered them with mushrooms, garlic, some wild oregano and tossed some dried cranberries in. The cranberries were an afterthought but it came out really nice. Then got a bunch of containers and put rice, the chicken on top and some organic veggies, making my own little healthy TV dinners. I use to buy a lot of Amy's Organic frozen dinners, I still do, but cut back after seeing the amount of sodium in it! wow
Now I'm cooking extra every meal and freezing some. Saves me so much time and money, especially eating as much organic as I do. One can of organic beans ( 99 cents) can span over three meals. The organic frozen veggies are often on sale and I buy LOTS. You can stir fry them, eat them as a side.
Oh also I wanted to add.... most frozen dinners, organic or others, the serving size is too small for me. I try and stay away from lean cuisine but when I did eat them I'd eat two! so I make my own dinners, add more veggies, less rice and then include a salad. I'm a pretty big eater.
