Take a red bell pepper, seed & cut in half. You have an option (at this point) of roasting it with a little olive oil or preparing a semi-raw meal by keeping it as raw as possible. When you have decided, fill with a raw/cooked hummus, top with purple onion, slices of avocado/radish, greek olives, and spicy pumpkin seeds. drizzle olive oil on top (if you like). w/
