For supper tonight, I am making a meatless 'sloppy joe's' kind of sandwich meal for my son and I. It all started with finding minature ciabatta buns, at the farmer's grocery store, recently.
Here's my recipe that I am using, tonight:
a small bag of Crimini mushrooms
a small sweet onion
1 small block of Tofu (soaked in Soy Sauce)
a quart of Marinara sauce (I might only use half a quart)
half a bouquet of fresh basil leaves
half a cube of salted butter*
two teaspoons of garlic paste*
Wash and cut the Crimini mushrooms into small edible pieces. Cut sweet onion into diced up bits, too. Cut up small block of Tofu into bite sized pieces. In a skillet, dressed down in coconut oil, use a medium-high heat to sear Crimini mushrooms, onions and tofu -- add sprigs of basil leaves, too. As soon as the stir-fry medley is nearly cooked, cover the stir-fry with Marinara sauce, place lid over the skillet, turn off heat and let it sit while you make Garlic Butter* to spread over single servings of Ciabatta bread. Mix softened, room-temperature butter with the garlic paste. Spread Garlic Butter over open-face Ciabatta bread. Spoon Crimini 'sloppy joe' mixture onto each serving of bread.
(Makes 4 single sized servings - feeds two people).
