Ive already made some pasta with eggplant and froze it for work meals... I was thinking of maybe making eggplant lasagna...where by you cut it in wide slices and stuff it with lasagna things...cheese...spinach...mushrooms...olives? with a nice simple sauce....I have fresh garlic thats begging to be used...and could procure some nice fresh basil.....mmmm
