OMFlippinGawd!! That was THE BEST Chop dinner I've ever done on my Weber!!
I used a little Italian salad dressing mixed with Sweet Mesquite dry rub..let it sit on the chops a bit before searing them by drizzling olive oil on the coals...after searing, pulled them to the side to slow cook "baking" them with the lid on...YUMMMMMMM was right

They were smoked all the way thru and sooooo tender.
However we had a slight change in veggies....I took a handful of little garden onions and roasted directly over coals (my roomie loves these, I hate onions)....fresh garden baby tomatoes soaked in a special tangy sauce...and my homemade slow cooked pinto beans flavored with a little bacon, dash of vinegar and sugar....
We both are dang good cooks and I'm thankful my roomie is willing to help me prepare dinner...I'm also thankful for having a place to use my Weber...can't live without it.
