A Spring veggie feast!
Tonight, I'm making an oil-free, dairy-free ramp pesto with lemon, walnuts, black pepper and nutritional yeast (I love ramps this time of year. They're such a special treat that you can only find for a few weeks in the Spring!) I served it over some lightly steamed veggies (cauliflower, broccoli and sugar snap peas).
Oh, and I made a white bean salad with some ACV, ginger and German mustard-marinated beets, carrots, Spring onions from my garden and some mixed greens.
Yum!
