Hoop cheese is a kind of cheddar. It's very mild; almost buttery and omg good.

I had never heard of it till I moved to the Carolinas, so it may very well be a regional thing. The "skin" of the cheese is red when it's mild, black when it's sharp. I always get the red one. It's a softer kind of cheddar. It doesn't melt as readily.

If you ever get your lil butt down here you can go ahead and try some. They have it at the farmer's market....
