So, it begins the phasing out of dairy products from the diet in hopes to achieve a vegan base life style.
I made a vegan spanikopita (it's spinach, tofu, vegan cream cheese, mayo, and sour cream..with rosemary, basil and salt for seasonings...wrapped in phello). To my surprise these things are pretty damn tasty.
While those were baking I cut up and sauteed some cauliflower, mushrooms, broccoli, onion and garlic..added some sliced cherry tomatoes and finished it off in a homemade vegan based alfrado sauce (once again I was surprised at the flavor...this may not be so bad)
