I made an odd skillet concoction with leftover shredded chicken & polenta, hatch chiles, a couple of eggs, black pepper and a little grass fed butter. After the main part was heated, I made a hole in the center and plopped two eggs in and let them cook. It sounded crazy to me when my brain said, "hey let's cook ...", but it tasted really good when all was said and done.

Well I'm cooking a chicken for chicken salad, so I will probably make a plate for spouse with sliced chicken and some pasta. I will have chicken salad on lettuce and various lowcarb snacks that pack easily for work. I gave up and went back to lowcarbing again but not too extreme and not every single day. I'm working on portion control as well.

I had tilapia with yogurt butter and lime juice (out of lemon), basmati rice with a pat of yogurt butter, steamed broccoli, a lemon meringue cup and a handful of gummy bears for dessert.
