We're having fajitas! I've made them before, but never using a tri-tip roast. They were on sale this week though, and looked really, really good, so we got one. If it turns out well, we'll get a couple more to freeze - it's that good a deal. I'm going to have to research it though - I've got a couple of hours.

We had salmon, sautéed chard and onion, white rice, and homemade radish pickles, which Pete asked for and devoured. The chard, onions, and radishes were from our winter farm share.

T-bones were on sale over the weekend so I scootered down to the shopping center to get some. They were sold out. I got a few rib eyes instead, but they were pretty fatty. Made me think again about getting a meat grinder.
But all was not lost, as I picked up a quart of won ton soup (which I dearly love) Had it for dinner and it will last me for three more meals. Add an awesome sweet onion and chicken teriyaki 1/2 sub from Subway and my dinner was outstanding. Best sub idea they have had since they eliminated the seafood sub years ago. For future no-cook meals I got a cold beef and Swiss sub from Winn Dixie. It's huge - measures 13 inches long, and a pack of 4 cooked bbq chicken legs from the deli. So I'm set for a few days. I rub some extra sauce on the chicken leg, wrap it in aluminum foil,and heat for about 10 minutes in the toaster oven. So much better than a microwave for meat. Last night:
I seasoned chicken tenders and added some Trader Joe’s Mexican cauliflower rice as well as navy beans with hatch chilies. I was craving Mexican and it hit the spot. Plenty of leftovers for lunch at work too!

Greek salad with grilled chicken. I live in a very Greek town. A piece of pita bread. I dipped the big pieces of veggies in the Tzatziki dressing and then poured the Greek dressing over everything else.

- cornbread - collard greens I made the collard greens in the Instant Pot, and they were easy, quick and delicious! I sautéed the onions, poured in some chicken broth and vinegar and sugar and spices, stirred in a pound of collard greens and put it on steam with the vent closed for 10 minutes. They were perfect!

The last few nights I've been eating frozen dinners I made and froze some time ago. For one meal I had stuffed cabbage made with carrots and ground turkey. It was super delicious when I made it, but it didn't freeze as well as the rice and ground beef version I have always made in the past. It was still flavorful, but very "wet." On the positive side, it produced a nice amount of tomato broth which I really enjoyed.
My second meal was chunky beet and cauliflower soup, one of my favorites. It is such a beautiful color, Along side I had the last four cheese puffs left i the bag - I just wanted that little bit of cheesy/salty taste, and my low cal daily addiction, a fudgsicle. Forgive me, I know this is a thread about dinner meals, but my favorite meal of the day was what I call breakfast because I almost always eat breakfast foods. I had a lot of calories left for the day, so I had a veritable feast eaten over a drawn out period of 1-2 hours. First I had toast with sliced Roma tomatoes and unsmoked provolone cheese which I toasted till the cheese on top just started to brown. So good. Then I had a small orange cut into a bunch of wedges. It was juicy and just right in sweetness. Lastly I had cream of wheat made in the microwave in one of the pretty turquoise bowls i just recently brought. I added brown sugar, a dab of bluebonnet margarine and some shredded coconut. mm mm mm. Smooches, Keri |

I made a lovely salad loaded with lots of fresh veggies. I added Orange Chicken nuggets on the side. I found a new dressing, Hot Honey Mustard dressing, from Trader Joe's. Now, that was a really good salad!!
Coconut milk mango OUI yogurt later. I just happened to walk by it and it looked really good! I shall see...
