Tonight I am making one inch thick boneless pork chops smothered in red bell pepper, onion with mushrooms along with a splash of non alcoholic white wine. The side dish will be a veggie mix brushed with seasoned evoo with sea salt and fresh ground pepper. This dish is simple and a hit around hear.

Bacon is cooking in the cast iron skillet as I type. I will have cottage cheese topped w/ easy over eggs, and some leftover grilled veggies to go with the bacon.

I thought I was starving when I punched out at work. I wanted to make Indian food. Natural grocers didn't have what I needed so I settled on Thai red curry with zucchini, carrots, onion, peppers, bamboo shoots, water chestnuts and spinach over rice noodles. I added lots of coconut milk in it.

Because I cook for an invisible army, it will be lunch for a few days.

Tilapia...Initially I just seasoned it and added butter and some fresh pineapple chunks...and then, I opened the fridge and saw the coconut/almond milk and thought: hmmm why not?! Final result was good! Added some fresh chunks of papaya to the plate as decoration/'dessert'
Salad: shredded iceberg lettuce, corn cut from cob...low fat sour cream as dressing...
and, just for the 'fun' of it, one soft peppermint puff candy :)

Tuna casserole with mini bow tie pasta cuz it makes it look so darn cute... :)

I stopped at a local Mexican place that I've wanted to try...

They call themselves "California Mexican " I didn't know what to expect...

I got chicken enchiladas with guacamole and rice and beans...nachos and some kind of cheese sauce came with it. I ordered flan for dessert cuz it's impossible for me to resist.

Everything was ok...not great. The place is always packed so I had high hopes. I can't stand a lot of onion in my guac. I think it's gonna be a one time thing. I confess that I am terribly picky about Mexican food....and Thai..

I seasoned a chicken breast and baked it...added a fresh beet to the oven to have roasted beet...two friggin hours later I can feel myself aging and yet the beet is still hard as a rock. Who knew beets take forever to bake...not me

Oh and who decides to turn the chicken while mostly undressed and gets splashed by hot chicken juice....yep. This girl. I've had far better thoughts...:|
