Dinner is done, I started with a dijon mustard and honey rub, then let them braise in water for about an hour. Rubbed ground ginger into them and let them cook another hour. Last hour or so, I sliced up a fresh jalapeno, dumped it in the water and stirred. Letting the steam from the water infuse my ribs. The results was tender and yummy, but next time, I'd add a few more jalapenos and I'd put them in the moment the water started boiling.

Stephanie, I barely got through 1 rib and have 3 more to share. If you lived closer, I'd be bringing them over to your house.
Still feeling weak, but not too weak that I couldn't eat something by now :)

My momma cooked an ole fashion southern dinner for me and my boys and it was delicious!!!!!!!! Her idea, she loves to cook and on Mothers Day all of us being together was wonderful!!!!

We had.....

pot roast and carrots
potatoes
green beans
homemade coleslaw
tomatoes, cucumbers, onions
deviled eggs
macaroni and cheese
homemade rolls

banana pudding
pineapple pudding

sweet tea
coffee

I don't want to even THINK about how many calories was in all that. I'll worry about it tomorrow. Today was Mother's day and it was wonderful!!!!!

The default tonight. It is what I have often when I don't know what to eat.

pinto beans on a paper plate, dump hot salsa and chopped up jalapeno peppers on beans, then handful of shredded cheese on top

Nuke it until the cheese is sloppy, then put a spoon of sour creme on it and smooth it all around

7-up to drink

Eating this right now. It does the job. I am not really hungry but trying to fill up some space. I bought a bucket of milk chocolate Blue Belle ice cream yesterday. If I don't make myself eat this real food, I will eat only ice cream for dinner. Want to try and make the ice cream last at least 3 or 4 days.
