Last night I chose hiking over cooking so....
I had an avocado sprinkled with sea salt. And some salt water taffy. I see a theme here. |
Well I know we will be short again at work tonight, so I'm going to pack a pb&j sandwich on sprouted bread, put snacks in baggies: peanuts, larabars, raw carrots, raw green beans(I LOVE them), apple slices, etc. Sounds good to me!

Tonight I am making chicken tacos, with shredded raw asparagus, carrots, zucchini, red & yellow baby bell peppers, and white cheese blended together to top the tacos with, Then a little green chile to finish it off. Good stuff!
Oh yeah, I almost forgot...for dessert- a Moser Roth Dark Chili chocolate bar! These are soooooo good! |

Lettuce wraps (chicken and chopped cabbage) with a light hoisin/oyster sauce. Slices of cucumber on the side.

Tonight will be our first home-cooked meal in our new place. Carnitas tacos, homemade guacamole and salsa. Some fresh fruit for dessert.

I've been marinating gizzards all day. A finger licking good recipe I've made before.
Baked sweet potato Cranberries.....sounds like a pre-fall menu :) Peach cobbler is in the oven now. A la mode style later! |

I am having half an egg salad sandwich, cantaloupe, and cold rootbeer.

Viana vegan chicken nuggets and homemade sweet potato fries baked in the oven in olive oil.
Those nuggets are the bomb. No they don't taste like chicken, they have their own awesome flavour and texture. Plus very fast to make in a pan. Got like 17 grams of protein in 3 nuggets too. |
I had half a Five Guys burger and a half order of fries with cherry/peach flavored water last night.

Probably an eggsalad sandwich? And I have nuts in baggies, fruit, pretzels to take to work and eat on the run. Oh and I have some veggie spring rolls left over to take! Forgot about them:jester::jester:

A twist on last night's dinner ... Lettuce boats filled with cold baked chicken, chopped cabbage, topped with a light hoisin sauce. Slices of cucumber on the side. Fudgsicle and/or a Popsicle for dessert.
