DC had a burrito and I had a burrito bowl last night.

I made dinner for the first time in forever...
I made something our family calls hot dish. It's an homage to my recently departed step father who created it when we were kids. I cooked cavatelli pasta and meanwhile sauteed red onions in a little olive oil and added some spices like garlic powder and 21 season salute. Then added a pound of ground turkey. Sauteed til cooked. Drained the pasta, added the turkey and a can each of fire roasted diced tomatoes with garlic, tomato soup , tomato sauce and drained corn. Typically I add frozen pepper blend but my honey doesn't love them like I do. A little cheese wouldve been good but I never got any. Still was yummy mmm |

Last night was El Pollo Loco chicken breast with brocolli and some store bought mashed cauliflower. Tongiht will probably be the same. Will be so glad when I get a fridge on Friday.

Had some hamburger gravy from freezer with a bit of rice and cottage cheese.
I have a few containers in my freezer cuz i used to make large batches and freeze them so i could routinely feed it to my dad as he LOVED bisquits and gravy and he was 89 yo and not 1 pound over weight.Anything to make him eat. He passed away this june.... so i thought of my dad as i ate! |
I made a chili lime garlic butter sauce to which I added a few sauteed Argentinian red shrimp. I put that on top of some basmati rice and topped it off with chunks of avocado and halved cherry tomatoes.
Dessert was coconut French yogurt with half of a sliced banana mixed in. |
I had a lovely steak dinner. I made it. One of my better efforts...wasn't burnt, wasn't dried out, wasn't tough as shoe-leather. I should have taken a photo.
