My 18 year old son cooked; Homemade garlic buttered bechamel sauce on pasta with pan seared chicken and caramelized carrots. Gawd I love that kid.

Oh it's the perfect weather for a porch night!
 
We are gonna fire up the bbq pit and have chicken, steak &/or shrimp shishkabobs. I'm also making veggie kabobs with red peppers, zuchini, yellow squash, purple onion & mushrooms... mmmmm! D will be having grilled asparagus instead of the veggie kabobs.

All washed down with iced, cold beer!

I started early this morning (who has time to cook with football on??!!) and made Charro Beans. We will probably have some fresh tortillas from a local market with some homemade salsa and maybe some rice. Simple, yet very delicious.


Recipe: Charro Beans
MAKE-AHEAD
1 1/2 pounds dried pinto beans, picked over and rinsed
1 quart low-sodium chicken broth
3/4 pound thickly sliced bacon, sliced crosswise 1/4 inch thick (I used some smoked pork for flavor not bacon this time)
16 garlic cloves, peeled
3 large jalapeños—halved, stemmed and seeded
1 tablespoon dried thyme
1 tablespoon dried oregano
2 large bay leaves
Kosher salt and coarsely ground black pepper

In a large pot, cover the beans with water and bring to a boil. Remove from the heat, cover and let the beans soak for 1 hour.
Drain and rinse the beans and return them to the pot. Add the broth, bacon, garlic, jalapeños, thyme, oregano, bay leaves and 2 quarts of water and bring to a boil. Simmer over moderately low heat until the beans are very tender, 2 hours and 30 minutes. Discard the jalapeños and bay leaves. Pick out and mash the garlic cloves, then stir them back into the beans. Season the beans with salt and pepper and serve.
MAKE AHEAD The charro beans can be refrigerated for up to 2 days.

Grilled seasoned steak w/a freshly made sour cream sauce with black pepper and horseradish.

Asparagus tips sauteed in butter, garlic, red pepper, sea salt, ground black pepper, and then sprinkled with fresh parm.

It was yum.

We had fast fry steaks, potatoes, green & yellow wax beans with carrots in the frying pan with margarine. Also my son's salad consist of romaine lettuce, croutons and bacon bits (still trying to get him to have other veggies in there, but at least he eats that ;) ) My salad had romaine lettuce and a mix of other leafy lettuce, baby tomatoes, green & red peppers, cucumbers, bacon bits and croutons. oh and shredded cheese ;)

Broiled rainbow trout with cornbread dressing, sweet potato fries, steamed veggies and enough really good tea to sink a ship.

Roasted chicken stuffed with onions and garlic. Mashed potatoes with gravy made from the pan drippings and the broth I made from the innards. Tossed salad with shredded carrots, tomatoes, and crusty dinner rolls.

Originally was having meatballs, until I dropped them after being cooked and the dogs gobbled them up. Instead, I said even though we have plenty to eat I want a roast beef sandwhich and fries. The dogs were in agreement. LOL
