Last night I had stuffed avocado with poke. I had the last half for lunch today.
Tonight, lets see what I have...last of the potato salad. I made a quinoa salad with cucumber, red onion and cut off corn from the cob, topped off with feta and balsamic dressing. Lemonade vodka seltzer, with lots of lemon slices. |
Last night I sautéed some kale and added in black beans, chopped cilantro, lemon juice, and some tamari. That over some basmati rice. It was delicious.

Last night was fruit salad and goat cheese on crackers. Too hot for anything else.

Roasted carrots, parsnips, organic rainbow beets, and baby garnet red sweet potatoes. For dessert: spelt scone with dried currant berries. Filtered clean water, to drink. :)

I'm making stuffed chicken breasts with a mozzarella spinach filling. I'm not a fan of turning the oven on, but i will hike up the A/C temp and enjoy a cold beverage.
Rice pudding later. Lots of ice cold water. |

Bowtie pasta with dill yogurt sauce, roasted veggies, eggplant, red pepper, cherry tomato, zucchini and sliced sausage - what's not to love?! I had it at room temp, and it was pure bliss! Oh, and I made a little substitution, using capers instead of anchovies, because who needs anchovies, right, lol?

Meatless meatballs casserole — which has cubed zucchini, minced garlic, jalapeño, baby teardrop tomatoes, organic Bella mushrooms, rosemary, and simmered to purrfection in a Parmesan white sauce with extra creamy cheese and a bit of canna oil.
