I made small sub sandwiches with beef kielbasa, peppers, onions, and fire roasted tomatoes. Salad, too.

i made a giant pot of veggie stock over the weekend pet sitting, and decided to make brown rice [with the stock, of course]. thawed out frozen tofu [freezing changes texture]. drained/squeezed out tofu, browned in cast iron skillet with veggies, shallot and garlic, set aside. made a cornbread and turned 1/4 of it into crumbs. combined all ingredients with more veg broth, and egg replacer. result:
vegan loaf with fresh sage, heirloom tomatoes, and romaine lettuce w/squeeze of lime. |
On the grill: - seasoned chicken breasts - zucchini and squash marinated in Italian dressing - pineapples On the stove: - baked beans In the oven: - roasted sweet potatoes - fresh bread |
I have had enough carbs for today. Tonight I am having tuna, fresh fruit of some sort, and bottled water. |
Dinner tonight is coleslaw and smokies :-)

I don't feel like cooking tonight... so I'm talking the honey into going out to eat. Momma wants chips, hot sauce & a big ol' margarita. Anything else is just a bonus ;)

A nice cold pasta salad ... angel hair pasta, celery, peppers, tomatoes, onions, blk olives, and salami and provolone cheese and Italian dressing. Peach / Mango ice tea.

We had roasted chicken the other night...and last night they got turned into stock...so tonight I'm making...
Cream of chicken with rice soup (favorite of the boys) and chicken salad for Scoote (her favorite) and I'll probably nibble on a little of both :cheesy: |

Tonight I cooks pineapple glazed pork chops,made a tossed salad,then steamed a bag of string beans w/carrots.But after I ate my salad and then the veggies ...no room for the pork chop.It will be good for a snack later or lunch tomorrow.
