I ended up cooking for a few of my close friends. Tonight I made Taco Pasta Bake and Salsa Rice with Black Beans. It was quite delish and all of my bois had full tummys and leftovers. yay!

Cool weather comfort food..
Tonight I'm going to do hot honeyed spareribs, served w/ a Santa Fe 5-bean soup and some homemade honey wheat rolls w/ real butter.

I took some chicken tenderloins out to thaw... but I really don't have a clue. Either grilled chicken ceaser salads OR some kind of chicken & rice casserole :)

tonight was comida mejicana en la casa. .
had leftover pork so I made more pork green chili since my babe liked it so much last time and fri jol es with jalapenos and some fresh jalapeno poppers stuffed with cream cheese and wrapped in bacon. to drink, modelo especial with v8. It was delish and I'm stuffed! .. and there is leftovers. |

For supper tonight, I made toasted Tuna & Egg salad sandwiches to go with a homemade soup that I made from summer, early fall squash (acorn, banana & pumpkin).
The soup was thick and creamy and spiced lightly with a pinch of nutmeg and cinnamon; with a bit of sea salt and honey, too. The soup was delicious. Sandwiches too. Will probably make an apple pie tomorrow afternoon. But I feel like making cookies tonight (oatmeal, walnut, raisin): I'm having a serious sweet tooth craving tonight. |
more than likely I'll be having leftover pork green chile and some spicy shrimp cocktail stuff. . or just the latter and a beer or two. :D

I'm thinking it's going to be eggplant parmesan grinders. We had lots of leftovers the other day. I'm going to add some pepper strips and mushrooms...serve it with provolone cheese on a broiled grinder roll...with some sort of salad on the side....gotta get to the store ...again....
