Tonight we are doing shish-k-bobs with lean steak, peppers, onion, pineapple, and maybe some yellow squash.

We'll have a salad of organic spring mix, carrot, and chipotle ranch (Jackhammer will put olives and croutons on hers) and Jackhammer will have roasted baby new potatoes while I have a small baked sweet potato (cinammon only please!)

I had something new to me called "salad burgers." It was a super lean hamburger grilled, and then you made an entire salad on top of it. No bun. Loved it.

Last night, I had a turkey burger at a restaurant and was introduced to sweet potato tots. OMG...so good!!

Tomorrow, I am making sure I order a salad. I can't wait to be home from this business trip. So much easier to regulate my food when I am home.

I had steak on the grill, corn on the cob, a big salad with all my fav. veggies in it, and some fresh tomato's covered with pepper.
Strawberries and rasberries with fat free whip cream for dessert. YUM
I make the best steaks ever!!!!!

Herbal dinner!
 
Since I was playing in my herb garden today, re-potting, planting, cleaning and watering, I noticed I had not used my tarragon very much this summer, and also that I had plenty of chives and Thai basil. So I made a quart of Thai basil lemonade in a mason jar, and with a nice piece of wild salmon, some salmon rillettes flavoured with chives, tarragon, and lemon juice. I will have some salmon rillettes later on great rye bread, with a simple salad of greens dressed with olive oil and lemon juice.....and a glass of Chardonnay! Right now I am enjoying the lemonade!

I just made stringy pasta salad, as the niece-person calls it. Its your basic pasta salad, with olives, tomatoes, green onions, minced celery, artichoke hearts, and (usually)chunks of mozzarella. I used angel hair pasta noodles for the noodles, and substituted menonita cheese for the mozzarella. (Menonita is this really good Mexican cheese made by the Mennonite farmers down there. It's very mild and quite similar to mozzarella, just a slightly different texture and taste.). For the dressing, I used a homemade Italian dressing, where I substituted apple cider vinegar and EVOO. Not the official Rachael Ray EVOO because I like this other weird brand that I found at Sunflower better.

Soon as it's nice and cold, I'm gonna make some toast to eat with it...
