I baked a loaf of sourdough today, so I had some of that with the leftover BBQ from last night, along with a slice of extra sharp cheddar cheese. Fresh blueberries and Greek yogurt for dessert if I want some later but not hungry as it stands now.

I reckon it should be called the "hotel room special" :chocolate: for a train engineer waitin to fly home on my return trip.....to my beautiful wife. So, dinner consists of a Portland hotel room cup of coffee and a couple squares of dark chocolate:tea:....it reminds me to stay awake. The coffee is good, sometimes less is more:stillheart:

Dinner tonight was typical "Daddy is out of town so we're having junk"... Queso Blanco and Rotel with Jaunita's Tortilla chips!

Tomorrow's dinner will be steak and gravy, mashed "faux taters" (puree'd cauliflower) and maybe some southern style greens... perhaps even some sweet tater biscuits!

I am trying to hit all the places in Indiana that are only found here while I am here! Lol.

Yesterday was Buster platter and onion rings from Halls for lunch. Dinner was TGIFridays with my Bestie...yes we have those in FL, but nothing is quite like sharing a brownie obsession with my bestie! Lol

Today will be Brevins for fish and chips for lunch, dinner will be at one of the local mexicanplaces with about 30 of my law enforcement friends :)

Tomorrow will be Claras Pizza King pizza and not sure where else

Yes..the theme for this weekend trip to Indiana...food and friends! Lol. Then back to FL Monday, to go back on my salad diet :)

I was slicing and dicing onion, garlic and jalapenos for a pot of 3 bean chili with ground turkey that has been cooking on low for a couple of hours. I'll slice an avocado and heat some corn tortillas to complete my meal. Believe me when I say, there will be plenty of leftovers for freezing in individual servings.

I think I will cook something nice for me, just because! I am thinking of doing a grilled chicken breast or pork chop lightly brushed with bber & chipotle bbq sauce with a side of baked potato - topped with fat free sour cream, chive and fat free mild cheddar, honey ginger glazed carrots, mixed beans and mushrooms. I may add some grilled pineapple to the plate.

It's been a while since I have had a kitchen to cook in, what I want when I want.
So....
I made homemade spaghetti sauce, simmered it for a few hours.
Added caeser salad and garlic bread with home made garlic butter (fresh garlic).

It was all very yummy. The manchild who still lives at home had a company dinner tonight and was quite bummed that someone else was cooking real dinner and he was going to miss it. He cooks often for himself, all sorts of good spices and things here I can borrow. I saved him some for tomorrow.

My supper was delicious! As a Saturday night treat I made hot chocolate with a kahlua whipped cream drizzled with a little caramel. I could live on this.

Having been dissatisfied with my attempt at making an omelete taste like my Grandma Mary's Chile Relleno Casserole, for the first time, I made the casserole just for me.

Though I feel guilty, because I am unable to share it with my Gaige, I have no regrets ;)...

tonight was not as healthy as i have been eating..a baked chicken thigh, mashed potatoes, mac and cheese from the blue box and a tortilla.

I buy homemade tamales from our local Mexican Market once a month and make a tamale casserole. It is tamales layered with cheese and onions and sour cream sauce then smothered with more cheese and green onions on top and baked for 30 mins at 350. I swear the calories are left out :-)

Ooooh...I want some of that too! I haven't made any in a while. I usually do the pork roast in the smoker for a while, then finish it in a sweet bbq sauce in the crockpot for a few hours. Hmm....I think I need to cook some this week!

Going to try my hand at..

Sweet and sour chicken, with made from scratch sauce. I don't have pineapple chunks, will have to do with crushed! Red peppers and onions, chicken in tempura batter, using the fry daddy. Going to have left overs for sure!

Miracle Whip (don't be hatin', I use mayo on hot things like veggie burgers)
Baby Spinach
Red bell pepper
Turk'y (not the two legged variety)
Freshly sliced jalapenos

Pete asked for a dish I make out of what's usually in the pantry and the freezer.

I sauté sliced peppers, diced onions, and one cube of minced garlic. When everything is nice and brown, I transfer the veggies to a pot. I brown one pound of ground turkey with one packet of taco seasoning and transfer it to the same pot. I add two cans of stewed tomatoes, one can of chick peas, and one small jar of sliced green olives.

It's not very fancy, and it's not really chili, but it is so satisfying on a cold Sunday night.

Teddy is making us dinner for when I get home from work...but I had a half of a sammich from the deli around 2...it was..

Real turkey breast with avocado, sprouts, pepper jack cheese, lettuce and tomato on sourdough bread. They call it the hot to trot turkey sandwich...lol Very good!

I only ate half silly bear...and that was only to compensate for lacking of lunch...and its been 7 hours since that sammich...i wanna see how the catfish turned out! BTW...are there actual veggies? Besides the cabbage in the slaw? You know I love my veggies baby ;) Not nearly as much as I love youuu though!

It was topped with Sweet Baby Ray's bbq sauce, sweet onions, smoked ham, pineapple chunks, and mozzarella cheese.
Iced tea to drink.
Going to go make a snack now of popcorn.

I'm home alone today so my meals have been lits ones,tonight I had a bowl of soup,a balonga sandwich with an small orange for desert.
