Something involving my new food processor, fresh veggies, and chicken breast. It's sounding like maybe a grilled chicken salad with a homemade Balsamic/Dijon dressing night. Yep, I think that is what I will have and with lots of veggies, zucchini, cucumber, onion, tomato, fresh spinach leaves and hearts of romaine. :byebye:

Oh and shrooms, can't forget those.

When I was young, my mom used to make this dish called lazy man's lasagna... so good, super fast, pretty cheap to make & makes plenty for leftovers. I haven't had it in years, but suddenly I'm craving it. Must make grocery list!!

small block of mozzarella cheese
lasagna noodles
and spaghetti sauce of your choice

Boil the noodles, drain & set aside.
Take the sausage cut into 3" pieces. Cut a slit in the top of each piece.
Slice the cheese and place a chunk in the sausage.
Take the sausage/cheese and roll up in the cooked lasagna noodle
Place in a baking dish. Repeat process with all the pieces.
Pour the spaghetti sauce all over the top and add a lil' more mozzarella cheese and bake until golden brown.

YUMMY!

Tonight was pesto pasta with grilled chicken, sausage, carrots, and mushrooms. All but one has eaten, and it seems to be a hit.

Homemade:

bierocks

pizza pockets

texmex pockets (instead of making them into eggrolls)

also, cooked up the sausage I had in the fridge with peppers and onions

I'll most likely make up a salad and tell them to have at it *shrugs*

It's looking like Ramen Noodles for the next month, lol. (I'm starting a new job and it's going to be about that long until I get paid again). Thank goodness for new opportunities AND Top Ramen! :tease:

Unbreaded salt-n-vinegar wings with bleu cheese-n-horseradish dressing, and a side of leftover raw zucchini, cucumber, carrots and mushroom slices. There is a mini New York style cheesecake waiting patiently in the fridge, for dessert later on. Can you tell I am having a free night?

Those salt-n-vinegar wings were so good though, I may not have any room for cheesecake.

You go to the hot deli at the grocery store and load up the container. Lol! Seriously! I wondered too about making my own, since they are Paleo.

The recipe I found said:
