I'm not sure which one I may make for the adults (I have changed my eating habits to a more vegetarian way of life and gren has decided for now she will be joining me)

either a baked black bean and sweet potato flautas with a salad or a spicy tofu hotpot (it looks like an asain style soup) ..both were on grens pinterest page.

Tonight I had a tiny bowl of light clam chowder, the last Andouille chicken sausage link and the last of the mixed veggies.

We had stuffed cabbage with portobello mushrooms, brown rice, onions, cabbage, and garlic in it. With tomato sauce on top. My mom used to call them "blind pigeons" and make them with ground beef.

Her cooking was awesome, as usual.

chili topped with shredded cheese, sour cream and chopped white onions
Homemade corn muffins with pieces of jalepenos mixed in

Tonight will be:

Spaghetti with meat sauce
Brussel sprouts
Orange sherbert from our blood orange tree

ok.. little miss has decided to join us in the vegetarian life style..young blood has yet to cross over. He hates veggies in general, out side of raw carrots that boy will only eat them because its a rule of the house. If it was up to him, he would never eat another veggie for the rest of his life (unless in a meat sauce over pasta or in a meatball sandwich). So, he'll pizza or a sloppy joe sandwich (both left overs from this week).

For the 3 of us I will be making a spinach, tomato, mozzarella and feta cheese quesadilla with zucchini parmesan crisps.

I actually cooked!

I made some penne and while that cooked I sauteed eggplant, garlic and roasted onion/pepper strips. To that I added a can of zucchini in tomato sauce. Sprinkled some garlic herb seasoning, garlic salt and crushed red pepper. Twas nummy :)

It is cold and has drizzled rain all day, so it is going to be a comfort food night for me.

I went out in this mess and bought some fresh catfish and had it fileted. I am going to pan grill that and have it with a steamy hot bowl of Polenta, (organic and GMO free) with raw white cheddar melted in it and sliced tomatoes.

It's been a while since I made ham,onion and potato hash topped with sunny side up eggs cook'd in a non stick pan.Dribble some ketch up over it and i'm in heaven..or as close as i'm gonna get.
