Tonight I am having a roast beef sub for dinner that I bought from the grocery store deli. I am also putting together the Waldorf Chicken Salad that I will have tomorrow evening. Watermelon for dessert! :p

Grilled chicken breast with Oven roasted cauliflower and broccoli browned with a little sprinkle of parmesan cheese. Dinner was delicious.

Tonight I poached fish in olive oil, butter, parley, garlic with fresh ground pepper then dressed it over with lemon. A salad was made and the dressing was made with lemon juice, evoo and a touch of white wine plus various herbs.
To have someone that apresheate the time it takes to do this from scratch cause I could have called for a take out, I doubt may son would know the difference . |
I have all the fixings (seriously, I typed, fixings?) for homemade Alfredo sauce. Angel hair pasta in the pantry, shrimp in the freezer.
Ta da...I think that is what it shall be. |
BBQ weather <3 <3 <3
It's barbecue weather (pearly skies, cooler temps), and we've been invited to several BBQ'S. I think tonight our friend's said we can bring something to BBQ or just be served with what they plan to make (it is a surprise, to me). Saturday and Sunday we take to the road as we drop in on invitation friendly engagements from people we've not seen in quite awhile. Beach BBQ, backyard BBQ.

I am having a nice cool Waldorf chicken salad with roasted lemon pepper chicken, red grapes, toasted walnuts, apple chunks, and whatever other veggies I decide to toss in, all on a big bed of chilled romaine lettuce. Cold watermelon and blueberries for dessert!

chances are I'll be throwing something together that has no name. I'll be looking into the fridge and on the counter to see what veggies I have ( I know I have spinach, tomatoes, etc) and will make a something to toss in with pasta

Dinner was to be open-faced broiled sandwich of tomato, smoked Gouda, and bacon....instead had a burnt grilled cheese because I accidentally burnt Dad's sandwich and made him another. Also had garlic dill pickle spear and 2 queen stuffed green olives

Lastnight: g/f pizza made with pesto, artichoke hearts, sharp cheddar and diced bacon with a spinach salad with carrots.
Tonight: carnitas w/ green chile and mexican slaw (cabbage, cilantro, red bell, and an orange/lime cumin vinaigrette) |
Crispy pan-fried tofu with spicy garlic spinach, with a side of spicy beans and rice.

Portabella burger with horseradish sauce, mixed greens and smashed avocado on a multi-grain sandwich thin along with sliced a salad of mixed baby greens and arugula, cherry tomatoes, fake bacon bits and a French dressing.

Grilled Gouda and provolone cheese on sourdough. Hummus, Greek yogurt with chives, topped with diced peppers, tomatoes, cucumbers, radishes and black olives with tortilla chips. |

I sauteed up some onions, yellow and red peppers, and broccoli ...made some homemade yeast dough and a white garlic sauce. Filled the yeast dough with the sauce, veggies,mozzarella cheese and fresh tomatoes diced...tossed them in the oven. Then made some pasta salad to serve with it.

Ahhh Sunday dinner...a little spinach antipasti salad, 1/2 of a cuban sub, and a little Waldorf salad to finish it off. Followed up by an ice cold bottle of water.

I had a garden veggie low carb wrap stuffed with beef steak, jasmine rice, light sour cream, fiesta ranch, arugula, taco sauce, sliced black olives and green chilies.
Actually, I had two of those. :blink: I had cherry limeade fizzy water and a watermelon wedge with sea salt and two WW ice cream bars and I'm on my 3rd Tootsie Pop now. :eating: |
