Last night I fixed dinner with my sister for our family. We made creamy spinach artichoke dip chicken breast, a salad and french bread. Will be making this dish again.

That sounds so delicious.

Reminds me of a party at work. I was fresh out of college with computer science bachelors, very first job - jr. software engineer.


I wanted to be impressive at the party so I asked my girlfriend to make a dish of her spinach artichoke dip for me to take to the party. Anyway, standing around eating at the party, my software manager and the database manager both wanted to know how I made this dip. See, I had lied and said I made it. I cannot cook something that complicated. Anyway, I freaked out when these 2 ladies expected the recipe. I said, "well ... it has spinach in it ... and let's see ... there's artichoke ... and cheese, yea, lots if cheese."

At that point, I fled, acted like a friend across the room had summoned me. As I rushed off, I told them I would write it down and provide it to them ... I gave them the recipe the next day after I got it from my girlfriend.

I never do that anymore!

I made it, I ate it, and I'm still alive! And I didn't burn hardly anything, well nothing important, not the food. While doing the noodles one broken little spaghetti bit fell in the drip pan/under the burner instead of into the pan and caught fire and temporarily danced with flame bit but it was really small, just a crumb so only lasted for a bit I didn't have to race for salt or rush to find a pan lid large enough to cover the burner or anything. All things considered I'm calling this one a success.

Spinach and ricotta ravioli with Alfred sauce. I added some imitation crab to it. That crab was sweet :)

Cooked up the eggplant that needed to be eaten and had cheesy bread.

Mini red velvet cupcake as a treat:)

Just made a massive pot of cleansing green soup to detoxify, heal and re-energise my mind and body in time for summer... so bye bye naughty comfort food...see ya next winter :byebye:

I thought I had nothing in the house but I didn't want to go to the store. I used what I had on hand and it turned out wicked good...

I sauteed half of a turkey (sliced) in a pan, added some frozen pepper blend...meanwhile boiled some rice in a bag...then added some veggie mix with corn celery okra and onion to the kielbasa pan. Drained the rice and added a can of Trader Joes Cuban style black beans and let it warm up. Threw everything together in the pot and it was super duper yummy. And I have leftovers for tomorrow

Friendlys butterscotch swirl ice cream for dessert.

I felt like I was in an episode of Chopped. I went into the kitchen this morning thinking I was going to make chicken taco salad. Alas, my basket had boneless skinned chicken thighs, an eggplant and a can of pork and beans.

Eggplant? Pork and beans? Taco salad? Ummm noooo. So I went into the kitchen and grabbed the good stuff.

Baked the chicken with fresh herbs from the garden. They flourished thru the winter months here. After baking, topped with a splash of balsamic vinegar.

Pork and beans, got doctored with, red onion, jalapeño pepper (from the garden), some chopped celery, a little mustard and brown sugar.

Sautéed the eggplant with some Mediterranean spice mix.

And I also made frog eyed salad. Enough of that for days!

Blaze says...this isn't all the beans? That was his fav.

I had to look frog eyed salad up. I'm born and raised Southern but I've never had it like that before (and never heard it called that). I've had a version of it with the mandarins and all the good stuff but minus the couscous. My family used tapioca pudding sometimes in it, so I guess that's our 'frog eyes'. lol

I got home late, so my dinner was a big bowl of '7 superfood' salad: broccoli, brussel sprouts (couldn't taste them, thank goodness), cabbage, kale, chicory, dried cranberries, roasted pumpkin seeds and poppyseed dressing. It was really good.

Actually it's neither tapioca or couscous. It's a tiny round pasta called, Acini de Pepe. It's really hard to find. Feels like frog eyes, or what you think would be frog eyes, in your mouth.

I knew someone would look it up !! Lol

I blame allrecipes.com. This is what they said:

"An An acini di pepe (or couscous) pasta salad with coconut, pineapple, Mandarin oranges, and marshmallows."

Honestly, I've never thought about what another animal's eyes might feel like in my mouth.
