We kind of veered off of low carb tonight. The GF made baby back ribs, cole slaw and a delicious corn salad from a recipe she found in Bon Appetite. :chef:

I pulled out my indoor grill, cause it's just so hot and the mosquitos are taking over out side.

Grilled chicken and onions over bow tie pasta with pesto sauce. I marinaded mushrooms, garlic with balsamic and red wine vinegars.

Tomorrow's lunch will be delish!

made sour apricot jam..then made a marinade for chicken and tofu - sour apricot jam, garlic, lemon juice, spicy brown mustard, sherry, spices..it was very good..the apricot jam was awesome!

Last night, I got home very late and didn't want anything heavy. I had a tomato sandwich (15 grain bread, light Miracle Whip, thick heirloom tomato slices) and the leftover tomato slices with sea salt.

That wasn't enough so I had a cookie too. That part wasn't great but it's better than gorging on chicken sausage and rice at 9pm.

My daughter is tweaking a mac and cheese recipe she learned earlier this year. Fine chopped cauliflower and broccoli instead of noodles, almond milk instead of whole milk, and a few other hacks. Sounds interesting!

tonight I made some roasted peppers and cauliflower to be served in a wrap with mushed avocado, spinach or whatever greens I have in there, and shoe string fries.

2 piece box KFC ... their cole slaw is the best!! I could eat a bucket of it by itself ... mercy, that would certainly level the playing field concerning Kevie ... sometimes that big pooch makes barking spider noises all night long ... Cabbage in large quantities gives me loud gas attacks too. *putting hand over mouth to stifle laughter* ... thinking "poor pocket pittie Jennifer" AAAHHHAAAAHAAAHAAAA ... god I have naughty mischief mind going on tonight

Earlier this morning I cooked a pot of great northern beans. When they were nearly cooked I added chopped orange and green bell pepper, a couple of chopped up zucchinis, garlic, lemon juice, my favorite Greek seasoning blend, and a cup of shredded roasted chicken. When everything was done I tossed in a couple of handfuls of spinach leaves and allowed them to wilt. I almost forgot...when the beans were cooking I added 1/2 cup of uncooked quinoa to the pot. It turned out more like a chicken & bean stew rather than a soup, and it's really good. That's all! :byebye:

Salad with baby arugula, slice plum tomatoes, bacon bits, shredded cheese and tangy bacon Catalina dressing. I had a second salad with the same stuff but sunflower seeds sprinkled on it too. Then I had a big bowl of ice cream and blueberries. Basically, everything cold I could find.

I have no idea what I will actually eat. However, on Fridays I tend to make a few things that folks can grab and eat when they get hungry.

Pasta salad (I make it with the same base but have 3 different types of eaters here. So, I lay out 3 containers and go from there. Vegans get the veggies but no egg, young blood gets egg but no veggies, and I get the whole lot :bucktooth:)

pinto bean in the crock pot to be served with white rice or just a tortilla (beans are great, because whatever doesn't get eatin gets re-purposed for another dish. Very much a staple food for protein in a vegan/vegetarian household)

I am either going to have smoked pork barbeque or smoked salmon.

I stopped and picked both up on my way home because I couldn't decide which one I wanted, but I think I will have the bbq tonight and save the smoked salmon to have with a sweet potato and some veggies tomorrow night.

There was a request for chili dogs, so I'm simmering the chili now. Earlier I made cole slaw, deviled eggs, and a fruit salad to go with. The chili is smelling good. :D
