Heading to mom's to have "our" traditional Easter dinner. None of us are big ham eaters.

Pot roast with potatoes and carrots
Kentucky wonders green beans
Homemade slaw
Corn on the cob
Homemade yeast rolls
Sliced tomatoes and cucumbers
Deviled eggs

Hot apple pie and peach pie with ice cream
Gallons of sweet iced tea

last night was chinese buffet. tonight I would imagine it's some kind of Easter dinner at work and whatever leftovers Zimmeh brings home.

Fresh trout fillets cooked with lime, red, yellow & orange bell peppers, onions, minced garlic, ginger, mushrooms, salt, pepper, red pepper flakes, olive oil and butter. Served over rice and topped with a cilantro/lime cream sauce, and chopped cilantro for garnish. Broiled asparagus tossed with olive oil, salt, pepper, red pepper flakes, minced garlic, and rosemary, and garnished with a sprinkle of grated asiago cheese.

This is the first time I have been able to create a recipe, for trout that I have caught, that I actually wanted to eat (I generally give away all of the trout that I catch). It was a yummy dinner, but I would have enjoyed it more, if I had been able to share the meal with loved ones.

unfortunately NOT Easter dinner with my family as I had planned due to the amount of home work I needed to attend to
So I will be having left over Thai food. fried rice, spicy mint pork, and pad See eu with chicken

I opted to stay home instead of going to the roomies Dad's

So I ordered a sub from Dominos and chocolate molten lava cake.

well, it was little man's birthday today as well as Easter. So, we had a cook out instead with potato salad, home made mac and cheese, deviled eggs, hamburgers, hot dogs, and I forget what type of sausage. We had two cakes..one for Easter and one birthday cake with mint chocolate ice cream.

We had Kim's three boys over and she made the whole meal. It is the first time I have seen her cook since Christmas ( and I wasn't here to eat it). So I was quite impressed by the full Turkey and all the trimmings dinner she made. Now that I know she can cook, she may have to start sharing in the day to day cooking.

I have no idea but lunch was a grilled panini sandwich with;
Shaved Brown Sugar Pork Loin, Sweet Potato Aioli, Caramelized Onions, Lettuce, and Two Cheeses.

Holy Hannah that was GOOD! Oh, and at the bottom of the sack was a GREEN lollipop! How did they know???

Super Supreme Pizza, thin n crispy crust, LITE sauce, minus pepperoni, red onion, and PLUS pineapple, diced tomatoes, and bacon! Yes, just.like.that.

Salad with lettuce carrots feta cheese and scallions. Nothing special but it took care of the hunger pain. And coffee for dessert.
