baked chicken breasts, jasmine rice, and sweet peas

Tacos.... nummy nummy tacos.

Chili dogs with cheese and jalapenos

Boiled a whole chicken - de-boned and pulled the meat - flavored with a splash of lime and salt.

shredded butter lettuce and cilantro
for flavor queso fresco y salsa.

Made mexican style rice.
Homemade guacamole.

And for dessert fresh passion fruit mousse (my new easy discovery)

To seal the evening - a glass of wine.

I may try mushroom taco's tonight! I have heard good things and it has piqued my interest a fair bit.

Being as I spent most of the morning haveing an out paitent thing done to my back, then was to foggy to chanch being around a flame to cook.My son stoped by Sams Southern Eatery and brought home each of us the best fried shrimp on the planet with side of choice,I had greens and corn bread he had salad...I confess I ate allll my shrimp first..great big fat juicy shrimp all 12 of them.Hey,it wouldnt take much for me top tackle 12 more shrimp.

I had chicken breaded in corn flake crumbs and then baked in the oven, potato, veggies and homemade tea biscuits.

Last night I made spicy shrimp in a tomato wine sauce with onion, garlic, basil and oregano over rice.. tonight I'm not sure since the kids are heading out ....hmmm

I'm taking the girls and their friends to the racquet club tonight for their Friday night BBQ. They have live bluegrass music and the grill options are amazing! Steak, salmon, hotdogs, burgers, chicken, bratwurst...and all the fixin's! Then it's back home for sleep-over fun!
