I made a mac & cheese lasagna.
(Kraft diner, sauce, ground beef, cheese and repeat layer. Cook for 20 minutes @ 350 F) Was delicious. Serves around 4 - 6 people. Have enough leftover for 2 more meals ;) |
Marinated trout w/peppers, onions, and garlic, with cilantro lime cream sauce, and baked riced cauliflower with cheese, and cilantro in it..

Tonights fare ...
I purchased some delicious chicken and garlic sausages at the Farmers Market this morning. So, they'll be cooked in a bit of olive oil in a hot pan. And, as an accompaniment, fresh asparagus tossed with a bit of garlic and olive oil, seared slightly in a grill pan. Light, tasty and fresh!

I just prepared then polished off the following: a handful of sea scallops sautéed in butter; a bunch of fresh asparagus that was blanched then chilled, paired with a tarragon and lemon infused mayo dippin' sauce; and a few grape tomatoes to round things out. For dessert I splurged and had two brownie cookies. I think I need a glass of (flax) milk now...

I cleaned out the freezer of most of the crap food that my ex left behind months ago, but couldn't resist fixing myself some tater tots and mozzarella sticks. It's my reward from working hard all day on house fix-up/organization stuff. That's my story and I'm sticking to it.
