We had leftover pork chops and veggies. Now honey is making homemade applesauce and lemon pound cake.

I had a nice salad with spinach, broccoli, red peppers, red onion and feta with lite Caesar dressing.

Best part is it was free from my work deli. And hopefully off sets the chocolate peanut butter pie I had in lieu of lunch.

I had dinner out with a friend this evening. It was simple but delicious. I ordered a meal with grilled chicken breast, sauteed spinach, sauteed summer squashes, (both the yellow and zucchini), a bottle of water and a cup of coffee. A salad came with the meal but I was too full to eat it, and will have it for lunch tomorrow.

I may or may not have ordered from the 55+ menu for the first time ever! ;)

My sweetheart made this amazing beef and veggie soup with a thick savory broth made from leftover ribeye steak.
Chocolate pudding with whipped cream for dessert.

Penne pasta with Alfredo sauce over a bed of fresh spinach, topped with sweet Italian sausage and chopped tomatoes. Parm and red pepper flakes added on top as well...I can come up with quick and fresh meals :)

I also made brownies of which I added some crunchy peanut butter and swirled it in.

I made lentil soup in the crock pot yesterday, and we'll have it tonight, my just had a baby two weeks ago neighbor has a portion, and we'll eat it again once or twice when I remember it's in the freezer.

Sauté onions, or onions and peppers, with salt and pepper and a generous quarter cup of garam masala.

Add one cup of lentils, four cups of water, and four cubes of Rapunzel vegetable bullion to the slow cooker, and set it to low.

When the garam masala smells cooked, add the veggies to the slow cooker and ignore it for six or seven hours.

When the lentils are pretty soft, add one bag of frozen chopped spinachand one can of coconut milk.

We eat this with cauliflower rice or some frozen combo of grains from Trader Joe, and if it's spicy, we add a dollop of plain yogurt.

I grilled enough burgers to carry me through a couple of dinners/lunches, and made a huge bowl of cucumber, zucchini, tomato and feta salad...with chunked avocado and raw spinach leaves to be added when plating. I'm good to go! :)

Our version of stone soup otherwise known as vegan chili with interesting flavors like sweet potato and cocoa and quinoa, tomato and spinach and chia. I have no idea what it will eventually taste like but it sure is pretty :)

I'm not sure... it was absolutely gorgeous today, so warm, the sunshine felt soooooo good. Maybe just a simple salad and maybe snack on some sweet coconut. Maybe have some pineapple juice. Definitely will keep sipping on water (with crushed ice).
