I don't know what to call it but...

I was at trader Joe's and picked up a thing of pesto filled tortellini...

Then I found this sauce with eggplant and red peppers...so my brain starting plotting...

I had chicken breast already so I just needed mushrooms and fresh spinach. Sauteed the mushrooms in coconut oil, added some frozen pepper mix and cubed chicken. Added the sauce. It was thicker than anticipated so I added some water.
Then added the tortellini and let it simmer. Sprinkled with parmesan and served with bread and butter. It was awesome and smells amazing.

Omg I miss Polish food... That was the best part of living where I did in Massachusetts...I make a good lazy man pierogi. My memere made the best golumbki ever...our Easter meal was a wicked good kielbasa blessed by the priest! Thanks for the memories :)

last night, my roommate's wife made:

zucchini pizzas.........were they ever good.
She halves a zucchini...tops with salsa...layers cheese & slices of chopped up pepperonis & adds more cheese & bakes till golden brown & cheese is bubbly...yummmm

Trying to get back to my mostly-vegetarian ways so I'm making JD's collard recipe and having some field peas and a pile of onions soaked in red wine and sautéed with garlic. (I won't be kissing anyone any time soon for sure!!)

Tonight I used some of the cooked ground beef from yesterday, and sauteed that with diced mushrooms, half a bag of broccoli slaw (which has a purple cabbage and carrots in it also) sriracha sauce, cumin, onion, a little cinnamon, and S&P. Once cooked, I spread some out on a coconut wrap, piled on some baby arugula, and rolled it up. Ding! <--that's the dinner bell. :)

Tonight's dinner will be some leftover veggie lasagna that I worked on yesterday. That shit came out so yummy I almost had it for breakfast!

I sautéed some onion, garlic, red and yellow peppers, and fire-roasted tomatoes in olive oil and red wine and added some tomato sauce, beef broth, black olives, spinach, and lots of spices. Simmered it down for 5 hours and layered it between wheat lasagna and parmesan cheeses.
Topped it with a bit of pecorino romano, asiago, and nutmeg and baked.

NOM NOM NOM!
