I used a smoked ham hock. It turned out very tasty. I am freezing some for mom.

2 slices of pizza with arugala on top.

1) Mother Earth: wholewheat with soy meat and brocolli and red bell pepper

2) gluten free crust with soy cheese and veggies

It was take-out from my fave local pizza place :)

Sadly, :bigcry: , I will SAVOR the last of the sliced Italian Roast Beef and Havarti cheese, for a grilled lunchtime sandwich.

I should just buy an truck load of it next time, so I'm not stranded without my favorite sandwich. :|

In other dinner time news:

I am having home made Minestrone soup for supper.
Lots of fresh vegetables, organic tomato paste and chicken n stock for the soup base. An sprinkle or two of kidney beans and an handful of rigatoni pasta and bow-tie pasta.

Sometime today, I hope to make cookies. And, frost them too. Maybe put a few sprinkles of tiny candies on them, too.

I have my Instapot cooking up a batch of beans.

I added leftover broth from my last roast, chopped hamburger patties that needed to get used, a pouch of veggie soup spices and some fat from the leftover roast to keep the beans from foaming and blocking the vent.

I can’t wait!

Soooo, I never made cookies because it was easier to make a Chocolate Pound Cake, with blueberries, coconut and slivered almonds, which turned out so GQQD! I had a small piece of it with the non-dairy Egg Nog Vanilla ice cream. Delish!

I'm having more soup and dessert for supper, today! :)

I have been craving fish for awhile now and just can’t seem to figure out why??? Anyhow, I took a can of mackeral, garlic & herb panko bread crumbs, and two eggs and made patties that I fried in evoo. I had them with horseradish on top of a bed of white jasmine rice. Delicious!!!:hangloose::hangloose:

OMG! I love taco salad....someone else in my house hates them though...but I could eat them every day!

Turkey, sweet potatoes, yellow squash, greenbeans cooked in bacon fat, stuffing, gravy, rolls, and pecan pie. Tea, hot coco, wine, and brandy to drink.

I spiral cut zucchini and made fritters. I saw a video on YouTube how to do this in a waffle maker, thus avoiding frying them. I was very pleased with how they turned out.

My youngest is out of town. Tomorrow my oldest will be headed that way to spend Thanksgiving with my ex and their stepmom's side of the family. So tonight I, my oldest, and his ex celebrated early. Since I had a major headache, my ex daughter in law to be had a terrible toothache, and my son was just stressed to the max because of all the pressures of his new job, none of us felt like cooking. So we skipped all the work and cleanup and opted for dinner out at our favorite Chinese restaurant instead. Despite all obstacles and odds against it we actually managed to enjoy ourselves and had a good time. Now I'm home having pie for dessert and Monte is having grain free turkey with giblets canned cat food for his early Thanksgiving meal. Tomorrow it's all about more of the same - left overs for dinner for both of us.

Last container of leftovers: Garlic and peppercorn pork loin, lima beans, petite carrots and small potatoes. Cost a whopping $12 for a meal that gave me seven meals throughout the week. :eatinghersheybar:

First off, let me say hope everyone has an enjoyable Thanksgiving day! :)

I will be having BBQ from the grill tonight. Actually, I will be having it every meal for the next 4 or 5 days.

They let us leave work at noon yesterday but will pay us for regular 8 hours.

I came home, fired up the grill and cooked lots of meat on the grill.

- 6 xl chicken breasts ... one for each of my dogs' dinner, one for my neighbor and one for my neighbor's Doberman pooch. Her Dobie had surgery recently, he is fine and I wanted to do something special for him. Actually, he ate a cat toy whole and it was not a small one. After removing it, her vet washed it and put it in a zip-lock bag. I saw it so I know just how big it was. I do not see how he did not choke to death. I will divide the last one 3 ways so my dogs can have a snack around noon

- 12 overly thick hamburgers (my babies had one each last night with their chicken breasts)

- 36 boneless, skinless chicken thighs with BBQ sauce, sent some to neighbor along with the chicken breast ... did not put the BBQ sauce on all of them so Kevin, Jennifer and Jeffrey can enjoy some of the thighs along with their hamburgers

- 16 huge pieces of boneless pork ribs, pure meat, no fat ... put BBQ sauce on them

I like not having to be concerned with food preparation during Thanksgiving holidays. :)

On a final note, I want to share something I am so thankful for. Being single, I do not feel obligated to be polite and watch that Macy's Thanksgiving Day parade. LOL! ;)

Last night, We had dinner out. We had the same app of chicken wonton tacos. I know, it sounds a little weird, but they. were. delicious. DC had honey chipotle chicken tenders with 4 cheese macaroni. I had steak with healthy grains and steamed greens and cherry tomatoes. It was pretty good but the steak could have had more seasoning. It wasn't anything that I couldn't jazz up though.

Tonight, it will likely be leftovers but I'm okay with that.

Last night was mushroom ravioli that was delicious and tonight will be a chicken breast with stuffing, stir-fried veggies with lots of egg nog throughout the day.
