I have a work meeting through the dinner hour tonight. My options are:
Pack something extra for work and eat before I go- if I have time.
Or
The building we meet in is always either too hot or too cold.
If it's too hot I'll have a salad loaded with chunks of blue cheese. I'm sure other things will be in there too but... blue cheese is where it's at.
If it's too cold I'll probably have a breakfast burrito because I don't like much else on their hot menu.

Last night I made a wonderful (if I do say so myself) beef stew.

I used baby carrots, baby potatoes, red peppers and green beans. All cooked in my awesome dutch oven with sauce made from beef broth. I sometimes like to serve stew over egg noodles, so I made some but I'm one of few that had it that way.

I can't wait for lunch to have some leftovers!

Last night I made meatloaf, roasted asparagus, and roasted fingerling potatoes.

Tonight will be a meatloaf sandwich with melted smoked provolone and strawberries/mango on the side. I have been looking forward to this sandwich all day. :)

WARNING: Do _not_ order KFC's Kansas City BBQ chicken.

The sauce on the chicken consisted of a ton of paprika and salt and a little sugar, bound together with chicken grease. I'm sure of it.

Needless to say, it was just revolting.

At least the biscuit and the mashed potatoes were okay.

Amy's cheese enchiladas . A small side salad to use up the last little bit of tomato before it goes bad. Some cucumber in the salad if it's still any good. Either Thousand Island salad dressing or ranch just depending on what's left in the fridge.

Bavarian sauerkraut, pastrami, Munster cheese (didn't have Swiss) topped with two over easy eggs. A little avocado dressing and sliced green onions!

I had a super easy and delicious bowl of Trader Joe's fire-roasted tomato soup with a bit of cheddar cheese. It is surprisingly good for boxed soup!

Mediterranean Fish...baked, baked beans, and mashed potatoes...neighbor across hall is a retired chef...he does a community dinner every few weeks. He had made me a plate to bring up for lunch today as I missed the dinner last evening....:)...OMG...mouthgasms....had wilted spinach, mini peppers, & cherry tomatoes on top with a seasoning....:)

I ordered in pizza with gorgonzola cheese, pears, walnuts, and balsamic vinaigrette. And no I did not pick the toppings. They were just "one of the pizzas" to pick from. It was a mix of delish and just too over the top!

I somehow ended up with a carload of teenagers of which only one belonged to me. Because the law states teens must eat pizza when in groups of three or more we headed to the local pizza place. I'm not a big fan of pizza so I had a create your own salad. I chose a lettuce mix for the base, Roma tomatoes, fresh shaved mozzarella, jerk chicken and balsamic vinaigrette dressing. Yummy!!!

I am going to make beef stew in the oven in a cast iron dutch oven. I am using turnips rather than potatoes to make it keto friendly. I didn't cook yesterday. I had grocery store chicken salad. The day before I made chicken curry (just so so), and the day before that broccoli cheese soup (divine even though the cheese clumped). I guess I am starting to cook some again.

I am going to make chicken fajitas. Maybe I will invite my new local friend over...as I can only eat just one. Good thing is, the chicken, peppers, & onions store well & are easily reheated.

Tomorrow I am going to a local Hamburger Mary's with friends for Drag Queen Bingo. My first time for this area. I LOVE it!!

Last week when I went grocery shopping, I bought some steaks (London Broil meat cuts) and I roasted them all afternoon.... with sweet onion, baby carrots and little sweet red peppers, and fresh basil leaves and a bit of fresh rosemary.

I'll have roasted steak to dine on, all week long....but the house smells divine. They're almost done roasting. I roast them until the meat is so tender that you don't have to cut it up.

For dessert: It's gonna be jelly beans.

Late after dinner, I'm gonna have a cup of hot cocoa with cinnamon sprinkles.

Stopped at the store on the way home to buy milk and canned dog food. This is the second time in the past month I only got part of the groceries I paid for. The cashier said I had it all when I asked. The canned dog food did not make it out of the store with me.

After I got home and discovered the loss, I turned the oven up to broil and cooked 6.5 lbs ground chuck and 7 lbs of skinless, de-boned chicken breasts. When it was done, I tore up most of the meat with my hands, filled up 3 bowls, stuck my head out the back door and yelled,"chicken and hamburger picnic!" Got somewhat clobbered by stampeding paws. LOL! Always lots of enthusiasm at my house to hear the word "picnic" in a sentence.

I ate an enormous burger with milk after I had fed them. So good!

Fresh salad greens, with sweet peas, pickled beets, crumbled blue cheese, broccoli florets, sunflower seeds and a tiny drizzle of creamy balsamic dressing. Sliced peppered tofurkey on sliced rustic sourdough bread with jalapeño artichoke spread from the deli. Water over crushed ice, to drink. Hot herbal tea after dinner.
